Fall Fun (plan B)

well, we had these fabulous plans to go to the Oatland Island Wildlife Center (near Tybee Island) to attend the Halloween Hike.  This is a great, non scary event, designed for younger children.  We've been attending this since 2010, soon after we first moved down here.  And last year our friends and neighbors joined us, and we all had a blast!  We were going to attend with our friends again last night, til I looked at the radar....they got a head start, and arrived just as we were leaving, only to report that they were experiencing on and off rain showers.  That was enough for these fair-weathered friends, and we immediately turned around and headed back home to work on Plan B......these poor girls were literally all dressed up with nowhere to go:(


But, although we were disappointed we didn't get to do the Halloween Hike with our friends (not sure if they wound up doing it either?), our plan B turned into a fabulous and relaxing evening!

and, in case this wasn't enough room, J remembered that there would be fireworks, just up the road, as apart of our local Seafood Festival.......we wound up with front row seats, baby!





and from our front row seats, we were also able to view the lightning show that was obviously going on in Savannah.  Very cool to see that in the background of the fireworks!  I'd say, our night went out with a bang!

Vegetable Pot Pies

 
4-5 cups, veggies of choice (we sauteed onion,  celery and garlic and steamed potatoes, peas, and carrots)

2 pie crusts (refridgerated or home-made....when I have time I'll do this with my 100% whole wheat flour, other wise I just use premade crusts or filo dough....have to be realistic at times;)

butter (I used about 2-3 TBSP)
flour (I used about 2-3 TBSP)
salt and pepper
1-1/2 cup of veggie broth
2/3 cup of milk
1/3 cup of grated cheese.

Roast or steam your veggies til softened to your desired texture; season to taste.

prepare pie crust in 9 inch pie pan (I doubled the recipe to freeze one).**** I suggest prebaking the bottom crust so it comes out browned and flaky and not doughy****

create a roux: combine flour an butter, whisk to together...gradually add in broth and milk and stir on heat til thickened, add in cheese.

Remove from heat and combine veggies and roux.

Season to taste (I used sea salt, pepper, and ranch seasoning).

Spoon into crust-lined pan, and top with other cust and flute the edges.

Bake 30-40 minutes at 425 degrees or so until crust is golden brown (**watch it closely, depending on your crust it could brown sooner;)

why we homeschool....

my girls love their playtime....and believe me, it's very creative and "constructive." Not only are they having fun playing Barbies, but they have been in the process of writing a script , for a few days now....for a Barbie TV show.....they are using Word for this, complete with setting, character development, and dialogue. Amazing what kids come up with when you give them freedom to create on their terms! 



I've always been the mom who swore she would never over schedule my kiddos. Yet, as a homeschooling mom, you tend to feel somewhat obligated to get them out and about in the world....in group activities. Yet my girls have confessed that although they enjoy a park day here and there, they miss having our "own" field trips. The energy of having a group timetable takes away their freedom to learn and explore at their own pace....they don't like feeling rushed, etc.

That said, we have an open and respectful family/homeschool environment....we all agree , less is more! Once or twice a month for a group trip, at most works best for us....nature-oriented! Homeschooling is not just about fostering a natural and creative learning environment for us, but most importantly, it's about self-discovery, freedom, and family closeness.

It's hard to believe that just two years ago....

my Little Angel was still reading and sounding out small, simple phonics books....like "CAT."

and just a few days ago, within about four months, she completed this entire series!  (and one book ("The Half Blood Prince"), she literally read in two days....it arrived late Tuesday night, and she was done by Thursday evening...and NOT reading all day long...because we weren't even home!   this girl LOVES to read :D...mission accomplished :D

 

Whole Foods is coming to Hilton Head Island!!!

The rumors are true. Whole Foods Market is coming to Hilton Head Island.
Several posts on Facebook on Monday suggested the upscale grocer that specializes in hard-to-find products and "food in its purest state," planned to move into space being vacated by Piggly Wiggly supermarket at Shelter Cove. A Whole Foods official confirmed those plans Tuesday, saying the store is slated to open in "mid-2014."
"The community of Hilton Head has been asking us to open a store here for years, and we are excited to be coming to the market," wrote Emily Shively, associate marketing coordinator for Whole Foods Market South Region, in an email.
The store, which sells natural and organic foods with a focus on products produced locally, will occupy 30,000 square feet at The Plaza at Shelter Cove shopping center and employ at least 100 people, according to Shively.
Piggly Wiggly announced Monday it will close its store at Shelter Cove in "approximately two weeks."
"The final date of operations remains subject to change, thus preventing a more definitive announcement," said Christopher Ibsen, Piggly Wiggly's director of corporate affairs.
The Shelter Cove store is the second of five Piggly Wigglys in Beaufort County whose closures have been announced recently. The store on Burnt Church Road in Bluffton will become a Bi-Lo by the end of the year, Bi-Lo announced Sept. 11. Bi-Lo bought that store and 21 other Piggly Wigglys in South Carolina and Georgia.
Three Piggly Wigglys will continue operating in Beaufort County, Ibsen said. Those stores are at Coligny Plaza on Hilton Head, on Boundary Street in Beaufort, and at the Royal Oaks Shopping Center in Port Royal. Fifty-seven Piggly Wigglys -- some corporately owned and some independently owned -- will continue operating in South Carolina, Georgia and elsewhere in the Southeast.
"It's sad to see Piggly Wiggly go. For the last 25 years, they've been a great asset not only to Shelter Cove, but to the island," said Realtor Phil Schembra, who along with the grocer were the first tenants to open in the shopping center in the late 1980s.
"They contributed to a lot of the community through the charities they support and have been a good neighbor," Schembra said. "It's sad to see them go, but we're fortunate to get an upscale grocer with a spectacular national reputation that will take the shopping experience on this island to a whole new level -- one we've not seen but are ready for."

Bean Loaf Recipe

Ingredients

    • 15 ounces black beans, drained and rinsed
    • 1 onion, diced
    • 2 garlic cloves, minced
    • 1 carrot, minced
    • 2 celery ribs, minced
    • 1 cup mixed mushrooms, coarsely chopped
    • 1 cup quinoa, cooked
    • 1 tablespoon oregano
    • 3 tablespoons whole wheat flour
    • 2 tablespoons low sodium soy sauce
    • 2 tablespoons ketchup

Directions

  1. Mash black beans in a large bowl and combine all ingredients until evely combined. Transfer to pan and pat down firmly and tightly using a spatula. Bake 45 minutes to one hour at 350, until firm and browned on the outside. Allow the loaf to cool and firm up before serving, about 15 to 20 minutes.
