Cheddar Beer Bread



Ingredients:
3 cups flour
1 tablespoon baking powder
3 tablespoons sugar
1 teaspoon salt
1 tablespoon dill spice blend*
1 cup aged white cheddar, grated
1 bottle (12 ounces) beer, at room temperature
1/4 cup unsalted butter, melted

Preheat the oven to 375°F. In a mixing bowl, combine all the dry ingredients and the cheese. Stir with your fingers to incorporate everything well. Add the beer all at once, mixing as little as possible; the batter should be lumpy.
Pour the batter into a 9-x-5-x-3-inch loaf pan and brush with the melted butter. Bake in the oven for 35 minutes, or until an inserted skewer comes out clean. Remove the pan from the oven and sprinkle an additional few tablespoons of shredded cheese on top and return to the oven and switch to broil on high. Be sure to watch the bread closely, and to keep the oven door ajar. Broil for 2-3 minutes until the cheese on top has turned a golden brown. Let cool in the pan for 20 mins then turn out onto a rack to cool completely.
*I used the Spice Hunter brand deliciously dill blend (I received this in a swag bag at some foodie event – can’t remember which, but thanks Spice Hunter!). The blend of spices includes dill weed, garlic, lemon peel and chives. Yum!

Cheddar Dill Beer Bread




Cheddar-Dill Beer Bread (Adapted from Beyond Easy Beer Bread Recipe on Farmgirl Fare) 
Yields 1 loaf 
1 cup all-purpose flour
1 cup whole wheat pastry flour
3 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 cups (10 fl oz) beer, room temperature (non-alcoholic is fine)
4 oz sharp cheddar, shredded
2-3 tablespoons minced fresh dill
2 tablespoons salted butter, melted (plus a little more room temperature butter to grease the loaf pan) 
Preheat oven to 375F; grease a 9- by 5- by 3-inch loaf pan with butter. 
Whisk together the flours, sugar, baking powder, and salt in a large bowl.  Stir in the beer with a wooden spoon, being careful not to over-mix; fold in the cheddar and dill.  Pour into the loaf pan, drape a piece of plastic wrap on top, and let it sit in a warm place for 20 minutes (the batter will puff a bit). 
Pour the melted butter on top; bake until a toothpick inserted inside comes out clean, about 35 to 40 minutes.  Cool completely before slicing.

Wax Museum Biographies

so the girls' yoga/ballet instructor Ms. Laura, always does a fun learning project after yoga is done.  Over the last few weeks, she gave the girls instructions to choose a famouse woman (or man:) in history, dress the part, and act them out, after their "button" is pushed...as if they are wax figures in a museum.  They are also to choose their wax "still" pose.  

Fairy Girl wasn't too interested in participating, so I'm not going to push it.  But Little Angel was all over this one...a little too all over....she couldn't narrow it down to any one person...but, her indecisiveness didn't hurt her, because she researched several famous people, and learned: Betsy Ross, Martha Washington, Maria Tallchief, Eleanor Roosevelt, Marie Antoinette...until we finally convinced her (after missing out on two opportunities to practice in class:) to go for Amela Earhart.

Honey Beer Bread

Ingredients (one loaf):
3 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons sugar
1 teaspoon salt
2 tablespoons honey
1 can beer
1/4 cup unsalted butter, melted
Directions:
Preheat over to 350F. Grease a 9″x5″x3″ loaf pan. Line the bottom of the pan with parchment paper. Set aside.
In a medium bowl, whisk together the flour, sugar, baking powder and salt.
Using a wooden spoon, stir the beer and honey into the dry ingredients until just mixed.  (Microwave the honey for 5 to 10 seconds beforehand to make it easier to stir in)
Pour half the melted butter into the loaf pan. Then spoon the batter into the pan, and pour the rest of the butter on top of the batter. Use a pastry brush to spread it around.
Bake for 50 to 60 minutes, until top is golden brown and a toothpick/knife inserted in the middle comes out clean.

Cream Cheese Sugar Cookies

Cream Cheese Sugar Cookies 
Ingredients
1 cup white sugar
1 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 egg yolk
2 1/4 cups all-purpose flour
Directions
In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.
Preheat oven to 375 degrees F (190 degrees C).
On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting, or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar.
Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely before frosting.

while the girls attended their second annual sleepover party....

we had our second annual date night!  We hit Truffles on Hilton Head island having dinner on the patio, and made a quick stop on the beach (you know, the sun had gone down, it was in the sixties, and we were chilly...pathetic:)
