Happy Herbivore Banana Bread (dairy-free, fat-free, egg-free, low sugar, whole grain, and delicious and moist!)
1/4 cup of non dairy milk (e.g. soy, almond, rice, etc)
1/4 tsp lemon juice
4-5 spotted or browning bananas
1/2 cup dark brown sugar
1/2 cup raw sugar
(**I replaced both with 1 cup of coconut sugar**)
1 tsp gound cinnamon
1/2 tsp ground nutmeg
2 cups whole wheat flour (I use organic whole wheat pastry flour)
1 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract
2 Tbsp pure maple syrup
preheat the oven to 350. Grease or spray a standard 8 inch loaf pan
whisk the non dairy milk and lemon juice together until bubbly
cream bananas with sugars by hand using a spatula or in a food processor until smooth
in a large bowl, whisk spices, flour, baking soda, and baking powder together
add milk-lemon juice and banana mixture, as well as all remaining ingredients, to the flour mixture and stir until just combined
pour into loaf pan, using a spatula to evenly distribute and smooth out the top
make a tent over the pan with a large piece of aluminum foil
bake 45 minutes to 1 hour or until a toothpick comes out clean
***I added nuts:)***
****I skipped most of the steps and started by mashing the bananas in the bottom of my kitchen aid mixture and poured everything else in and mixed together;) came out just fine and less dishes;)****

Week one with the new Bacchetta:
She is loved! I opted for a SWB so I can fit it into the back of my
Sienna and so I can do some "off-roading".... Landed at Bull Point,
overlooking Skull Creek on Hilton Head Island. I am sitting here
watching shrimp boats and dolphins;). Welcome to biking in the

Halloween Week Happenings:
My new definition of a short bike ride is now 5-7 miles instead of 5-7 blocks.

Chunky Vegetarian Chili
1 Tbsp oil
2 cups chopped onion
1/2 cup chopped yellow bell pepper
1/2 cup chopped green bell pepper
2 garlic cloves, minced
1 Tbsp brown sugar
1.5 Tbsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
2 (16 oz) cans stewed tomatoes, undrained
2 (15 oz) cans black beans, rinsed and drained
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can pinto beans, rinsed and drained
(***add in veggies to taste, saute' with onion if desired: celery, shredded carrot, shredded zucchini, etc)
Heat Oil in a Dutch oven over medium-high heat. Add onion, bell peppers, and garlic; saute' 5 minutes or until tender. Add sugar and remaining ingredients, and bring to a boil. Reduce heat, and simmer at least 30 minutes (or all day;)
Yield: 8 servings

My New Bacchetta Recumbent.....first family ride!
round trip from our house to the May River....18 miles.....I had NO problem keeping up with the Rans Screamer Tandem (at times I had to slow down;) AND not a sore muscle on my body...and no sore tushes;) .... and I haven't ridden much in YEARS.....SO happy with my new bent!

the toad in the toilet
it's true, my parents had a frog (or possibly a toad, not certain) in their guest bath toilet. They found this out when they returned to Florida about three weeks ago. They heard it croaking at 2 am....it was a tiny little thing.... a white baby....and then it GREW....it would disappear and reappear...they'd flush it, and it would come back. And sure enough, while we were there, their guest appeared. I have to admit, I'd give a couple of curtousy flushes, just to make sure there wasn't a "toad on my tush."
well, all of a sudden, last night, Fairy Girl screamed and ran out of the bathroom....although that toilet lid had been closed, somehow that froggy magically found its way into the bathtub! I guess he served his purpose and was done living in my parents' toilet;) So, my parents' new hero, their son-in-law, was able to successfully capture this poor guy. He then walked him about two blocks away, released him onto the golf course, where he happily hopped away to freedom in the great outdoors, not in the sewers. I think this is the first time he ever saw daylight! I couldn't imagine living, you know, where he was living;)
but then, something very strange happened.....as we were driving home, going through The Villages, right next to us was this Divine Sign...what is the Universe (or said toilet toad;) trying to tell us? My hunch, he misses my parents and wants to return home:)
