1 package (8 oz) lo mein noodles (I used thin spaghetti)
1/3 cup peanutbutter
1/4 cup soy sauce
1/4 cup orange juice
1/4 tsp cayenne pepper
3 medium carrots, shredded
1 large red bell pepper, cut into 1/4 inch strips
6 medium green onions, sliced
1/2 cup dry-roasted peanuts
1. Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain.
2. In small bowl, mix peanutbutter, soy sauce, orange juice and cayenne pepper til smooth.
3. In large bowl, toss noddles, peanutbutter mixture and remaining ingredients.
***I also fried up seitan in terryaki sauce, and tossed it in.
I threw in some crescent rolls to accompany the above home-made butter! My girls learned how to make butter, the old-fashioned way, at a harvest festival in Savannah we attended (life in the 1800s:) So, here is some butter they made at home tonight!! Naturally we had to have something to accompany the butter:)
