Tortellini with Fresh Vegetables


one pkg chesse filled tortellini
olive oil
small onion, diced
2-3 cloves of garlic, minced
1 medium bell pepper, cut into one inch pieces
2 cups roma tomatoes, chopped
1 medium zucchini, cut lengthwise in half, then crosswise into slices
Italian seasoning
garlic salt
freshly grated italian cheese (I used asiago)


saute' onion, garlic, pepper, zuchhini till softened.  Add roma tomatoes, and cover for a couple of minutes.  Add in seasonings to taste.  Add in (drained) tortellini and stir in freshly grated italian cheese.

Oh does this look good. And I just bought some cheese tortellini - I got them at Trader Joes - love that store.

I will have to try this recipe - it looks very good.

I had a moment to fix this for dinner tonight. Wow was it good. I wasn't sure that my husband would like it - as sometimes he likes dishes with lots of veggies and many times not. He seems to be more of a meat and potatoes kind of guy. Still, after being married to me for so long he has come around and does eat more veggies. Well, he LOVED this meal. LOVED it! So thank you so much for posting this. I have to confess I didn't have the cheese you talked about - so we just sprinkled with parmesan cheese and that tasted yummy!
