Happy Herbivore Banana Bread (dairy-free, fat-free, egg-free, low sugar, whole grain, and delicious and moist!)

1/4 cup of non dairy milk (e.g. soy, almond, rice, etc)
1/4 tsp lemon juice
4-5 spotted or browning bananas
1/2 cup dark brown sugar
1/2 cup raw sugar
(**I replaced both with 1 cup of coconut sugar**)
1 tsp gound cinnamon
1/2 tsp ground nutmeg
2 cups whole wheat flour (I use organic whole wheat pastry flour)
1 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract
2 Tbsp pure maple syrup

preheat the oven to 350.  Grease or spray a standard 8 inch loaf pan

whisk the non dairy milk and lemon juice together until bubbly

cream bananas with sugars by hand using a spatula or in a food processor until smooth

in a large bowl, whisk spices, flour, baking soda, and baking powder together

add milk-lemon juice and banana mixture, as well as all remaining ingredients, to the flour mixture and stir until just combined

pour into loaf pan, using a spatula to evenly distribute and smooth out the top

make a tent over the pan with a large piece of aluminum foil

bake 45 minutes to 1 hour or until a toothpick comes out clean

***I added nuts:)***
****I skipped most of the steps and started by mashing the bananas in the bottom of my kitchen aid mixture and poured everything else in and mixed together;)  came out just fine and less dishes;)****

Pumpkin Cranberry Bread

We've had an oddly cool summer up in our neck of the woods this year. August is usually very hot--but not at all this year. So, I've been in the mood for fall. In addition to my upcoming redecorating project in the dining room, I've been in the mood to bake. (And I must admit, I'm procrasting on tearing down the wallpaper, since that's NOT my favorite thing to do. Luckily there's not a whole lot to do. I'm hoping that large strips will just come down easily:) So, I'm making good use of my procrastination and baking. What flavors speak fall more than cranberry and pumpkin, especially combined. So, enjoy...

  • 3 cups flour
  • 1 Tbsp plus 2 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1-1/2 tsp salt
  • 3 cups granulated sugar
  • 1 can pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup orange juice or water
  • 1 cup fresh or frozen cranberries, chopped
Directions:

Preheat oven to 350 degrees F. Grease and flour two 9x5 loaf pans.

COMBINE flour, pumpkin pie spice, baking soda and salt in a large bowl. Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat til just blended. Add pumpkin mixture to flour mixture; stir just til moistened. Fold in cranberries. Spoon batter into prepared loaf pans.

BAKE for 60-65 minutes. Cool on wire racks for 10 minutes.

Makes two loaves.
For three 8x4 loaf pans: bake 55-60 minutes
For six 5x3 mini loaf pans, bake 50-55 minutes.

Orange Cranberry Bread

I made this recipe yesterday to go with some broccoli-zucchini soup I made yesterday----dinner was a hit:) I have loads of cranberries to use up that my parents gave to us before they left to Florida (they live in Cranberry land when they're in northern WI for the summers). This recipe makes two loaf pans of bread. I opted to do the second batch in mini muffins in anticipation of my great nephew's visit!! (his batch was done without nuts, as he's a little guy:). I like this as there is an apple in here too. So they are in the freezer waiting for you:) I can't wait for his visit (oh, and his parents too:) so we can convert him from Buckeye to Badger, tee hee:)

Here's the recipe:

  • 2-3/4 cups flour
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 3-1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg
  • 1 cup milk
  • 1/2 cup orange juice
  • 3 Tbsp. oil
  • 2-3 tsp grated orange peel
  • 2 cups coarsely chopped cranberries
  • 1 large apple, peeled and chopped
  • optional, add in one cup of chopped walnuts or pecans
In a large bowl, combine the flour, sugars, baking powder, salt, cinnamon and nutmeg. Whisk the egg, milk, orange juice, oil and orange peel; stir into dry ingredients just until blended. Fold in the cranberries and apple.

Pour into two greased loaf pans. Bake at 350 degrees for about 45-55 minutes.
