Ok, so I kind of made up this recipe, and WOW if I may say so myself! Here goes (sorry, probably not the best at writing this out in a "professional manner," but you should get the jist of it:)
16 oz of ziti, cooked (reserve 1 cup of pasta water)
1 can of black beans (rinsed and drained)
green bell pepper, diced
onion, diced
1 minced clove of garlic
taco seasoning, to taste
2 cups of milk
2 tbsp of butter
2 tbsp of flour
2-3 cups of chedder or mexican cheese
2 cups of sour cream
1/2 of a block of cream cheese
1 cup of salsa
in one pan, boil ziti
in another pan: sautee: onions, bell pepper, and minced garlic. Add in black beans, and taco seasoning to taste. Add in 1 cup of salsa. Add in all the cooked ziti plus one cup of pasta water. In a separate pan (or drained ziti pan, which should still be warm) melt 2 tbsp of butter, whisk in 2 tbsp of flour, til thickened. Slowly add in two cups of milk, continuing to whisk. Bring to a soft boil, while continuing to whisk and keep it at a soft boil for about 1 minute til thickened. Add in cheese, cream cheese, and sour cream, blending til you have a nice sauce. Pour cheese sauce into ziti and bean mixture, stir well.
